The
sweetness and sweet taste of stevia sugar is produced by many
sweet components which are stevioside, rebaudioside A ,C,D,E ,dulcoside
A and etc. The first 2 components are the principal diterpene
glucoside which consists of steviol aglycon. Stevioside, about
300 times sweeter than sugar, accounts for 60-70%; Rebaudioside
A with sweet taste most similar to sugar, about 450 times sweeter
than sugar, accounts for 15-20%. The other components are small
in quantity.
The sweet taste of stevia sugar is pure,
cool and long-lasting. Among various natural non-sugar sweeteners,
the sweet taste of stevia sugar is most similar to cane sugar.
And it will taste better if co-acts with citric acid, tartaric
acid, lactic acid, organic acid and amino acid.
