    Stevia sugar is quite stable under the general food processing condition, which is good for lowering viscosity and preventing bacteria growth as well as extending shelf life.

1. Acid/alkali and heat stability

¢Ù Stevia sugar solution in PH3 condition and room temperature almost does not
    decompose or form sediment if kept for 180 days.
¢Ú Stevia sugar's melting point is 196-198¡æ. So it will not break down at high
    temperature like saccharine or aspartame.
¢Û Stevia sugar has no change at all if heated to 100¡æ for 1 hour in the range of
    PH3 to PH9£¬seeing the following figure:



2. Light stability
No matter in solid (powder/granule) or in liquid, stevia sugar is quite stable to sunlight.

3. No ferment ability
Stevia sugar does not mold or decay in the long time storage. Its finished product does not make brown stain like cane sugar when heated.
